    Bleu Cheese Stuffed Filet Mignon..

    Dumb easy - and it impressed.

    Slice up some potatoes, onion, and brussel sprouts..

    Get some creole seasoning, or you could even blacken if you wanted to...

    Bit of oil in a cast iron skillet... Oven on 350...

    Cut a pocket into the filet's length wise... Stuff with Bleu Cheese to taste - I did two teaspoons full.

    Coat generously with the creole/blackening seasoning.

    Drop the meat into the cast iron skillet for 3 minutes a side. This will create a sear/char on the outside while leaving the inside relatively uncooked. Add onion, potatoes, and sprouts to the cast iron skillet and then stick that bad boy in the oven for appx 7 minutes for relatively rare.

    Let meat rest for 10 minutes and then pour a butter/worstechure(whatever)/seasoning mix over the meat and/or potatoes..

    Super quick, super impresive to company, and the taste was phenomenal. Next time I do it I will add a shake or two of garlic salt before sticking it in the oven - but thats just me...

    Did filets on cast iron then the oven last night and they came out great. I couldn't bring myself to slit them open for the blu cheese so it just went on top at the end. I did roasted potatoes by themselves and steamed fresh green beans by themselves. With the steaks I did sliced bella mushrooms and red onions.
    Thanks for the inspiration. It was a really good meal considering the small amount of time it took to throw it together.

    My brother makes steaks or burgers sometimes and sticks the bleu cheese on top.. Honestly I haven't ever been a fan of it that way but I could the stuffed version just to give my girlfriend something different as she IS a big bleu cheese fan...... The stuffed had a very different taste - I liked it a lot bette..
